Fresh Ideas to Include More Nutrition in Common Meals

It was a real treat to have Amelia's mom, Vanessa, spend the morning with us! She helped us learn how to turn simple pasta dishes into healthy super foods. We made zuchini pasta, spaghetti out of squash, fresh nut-free pesto, fresh tomato sauce, and soba noodle salad with a zesty orange-miso dressing. 

Students had opportunities to chop, dice, stir and slice their way to a delicious mid-morning meal.

Students, I hope you'll try these healthy dishes at home.
